Chicken Consomme

Consomme is a type of clear soup or stock made mostly from ground meat such as chicken or beef. The key to making a good consomme is by simmering but not boiling because it will cuddle up the soup. According to wikipedia, consomme have been since the Middle Ages. Imagine how long consomme have been in the culinary world.

Egg Whites


Chicken Meat Minced mixed with Egg White


Some Mix Dried Herbs


Minced Mirepoix (Onion, Carrot, Celery)


Combine Chicken, Egg White, Herbs and Mirepoix


Carrot Julliened and Sliced Onion for garnishing


Caramelized Onion on a pan to give golden color to the soup


Caramelized Onion


Pour in cold water to the Chicken Mixture


Add in Caramelized Onion to the soup


Bring to a boil


Low the fire till simmering process for approx 20 minutes


Strain to get the clear soup and season to taste


Garnish with Julliened Carrot, Sliced Onion and Prawn Farce Wanton (Optional)
